When focaccia bread is made well, its amazing. I love the strong taste of the olive oil mixed into the dough and the gorgeous mix of herbs. In this recipe I used a mix of garlic, oregano and rosemary for the perfect, light focaccia dough and crisp golden crust.

One of the best things about using focaccia as a base for pizza is that, because it is a nice heavy bread, it’s really holds a lot of weight. So you can really load it up with your favourite toppings without worrying whether the base will hold.

I used a simple mixture of homemade marinara (using this recipe), olives, maitake mushrooms, sun-dried tomatoes, mozzarella and Parmesan, with some arugula leaves sprinkles over the top, for a bright, vibrant and super tasty pizza!

Ingredients

  • 1/3 cup olive oil
  • 2 cloves of garlic, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/4 tsp cracked black pepper
  • 1 cup warm water
  • 1 packet dried yeast
  • 2 cups of all purpose flour (plus extra for kneading)
  • 1 tsp salt
  • 1/3 cup marinara sauce
  • 1/2 oz sun-dried tomatoes, roughly chopped
  • 2 oz maitake mushrooms, roughly chopped
  • 10 black olives, halved
  • 1 oz grated Parmesan
  • 2 oz mozzarella, cut into slices

Method

    To Make the Focaccia Bread

  1. Begin by placing a small saucepan on a medium heat and pouring in the olive oil. When it is hot, add in the garlic, oregano, rosemary and black pepper and fry for 3 minutes, until the herbs are fragrant, then remove from the heat and leave to one side.
  2. In a large bowl, pour in the warm water and yeast, give it a good stir and leave for a couple of minutes.
  3. Next, sieve in half of the flour and 2 tablespoons of the olive oil mix from the saucepan. Stir until combined, then follow with the rest of the flour and salt and stir until combined.
  4. Remove the dough from the bowl and place onto a floured surface. Knead the dough for around 2 minutes, until it becomes smooth and elastic. IF the dough becomes too sticky whilst kneading, add a little more flour as you go.
  5. Place the dough into a greased bowl and cover with a damp towel. Leave to rise for 1 hour (you can leave it for longer if you want/need to).
  6. 10 minutes before the dough has finished rising, preheat the oven to 350 Fahrenheit / 200 Celsius.
  7. Punch the dough down and remove it from the bowl, placing it onto a large rectangular greased oven tray and press the dough outwards, so that it fills the surface of the oven tray.
  8. Pour the remaining olive oil mixture over the dough and place your oven tray into the oven, baking the foccacia for around 15 minutes.
  9. To make the pizza

  10. Remove the foccacia bread from the oven and pour over the marinara sauce, spreading it evenly.
  11. Add on all of the other toppings and place the pizza back into the oven for 5-8 minutes, until the crust is golden brown and the cheese has melted.

Always looking for fun new ways to enjoy salad: This Blackberry Fig Salad with roasted sweet potatoes (and homemade tahini dressing!) needs to be on your list ASAP.

I think I’m finally coming to terms with the fact that fall is fast approaching. That may have to do with the fact that it was cold(er) and rainy here in Michigan the past few days and I fully embraced sitting in sweatpants all day. And now I’m in Portland as I write this and it actually IS cooler and rainy here so I’m feeling the fall vibes. The leaves are even beginning to change as well so now I am excited and ready for it.

But one thing I am not ready for is fig season to end. It comes and goes so quickly! So I couldn’t let fig season pass us by without bringing you one recipe to inspire your fig eating ways. They were on major sale on Whole Foods the other day and I couldn’t pass them up! 

By the way… Have you tried fresh figs? I think it’s one of those fruits that not many people grow up eating. Unless we’re talking about fig newtons. But we’re talking about fresh figs which are just so lovely. Not to mention beautiful! Well, at least I think so. They’re beautiful in their own weird way though, ya know?

Let’s get on with it, shall we?

WHAT YOU NEED

  • roasted sweet potatoes
  • blackberries
  • fresh figs
  • salad greens
  • pecans
  • goat cheese (omit if dairy free or vegan)

FOR THE DRESSING

  • tahini
  • balsamic
  • maple syrup
  • stoneground mustard
  • garlic
  • salt

The only little bit of prep time you need is for the sweet potatoes. I like to cube mine up into smaller chunks so they cook fairly fast – about 20 minutes at 375ºF and you’re good to go.

While the sweet potatoes cook, wash the fruit, slice the figs and make the tahini dressing – you just throw everything in a blender for that. EASY.

Also I hope you’re ready to get on the tahini bandwagon because this dressing is delightful with this fig salad combo.

I am picturing this salad being served at an early fall dinner gathering and wowing your guests with all of it’s deliciousness.

Oh oh, and if you’re looking for a way to make this fig salad a meal, I think grilled balsamic chicken or even salmon would be so good hear!

Blackberry Fig Salad with roasted sweet potatoes

Description

This Blackberry Fig Salad with roasted sweet potatoes is the perfect side dish for dinner. Top with goat cheese, pecans and homemade tahini dressing for a unexpected yet delicious combination. Gluten-free and paleo-friendly. 

Ingredients

For the salad

  • 1/2 TBSP olive oil

  • 1 medium sweet potato, peeled and cubed

  • 1 pint blackberries

  • 6 fresh figs, quartered

  • 6 cups salad greens (or as much as you want for 2-4 people)

  • 2oz goat cheese, crumbled

  • 1/4 cup pecans

Balsamic Tahini Dressing

  • 2 TBSP tahini

  • 1 TBSP balsamic vinegar

  • 1/2 TBSP maple syrup (or to taste)

  • 1 tsp stoneground mustard

  • 1/2 tsp minced garlic

  • pinch of salt, to taste 

Instructions

  1. Roast the sweet potatoes: Preheat oven to 375ºF and line baking sheet with parchment paper. Spread cubed sweet potatoes on baking sheet and drizzle with olive oil. Spread around with hands to coat. Bake for 20 minutes or until sweet potatoes are golden and soft. Set aside.
  2. Meanwhile, prepare the fruit by washing and drying, and slicing figs into quarters.
  3. Make the dressing: add all dressing ingredients to small blender or small food processor and blend until smooth. You can add a pinch more of salt or a splash of more maple syrup to taste.
  4.  Add salad greens to a large bowl and toss in blackberries, figs, roasted sweet potatoes, pecans and goat cheese if using. Serve with tahini dressing and enjoy!

Double recipe if serving a crowd

Store leftover dressing in covered jar in fridge, up to 1 week.

Happy Labor Day! I hope you are enjoying the “Last Day of Summer”?

I was so excited by the idea when a sweet attendee at JunkieFest, Jalayne, wanted to stamp the Birch Trees as Aspen trees! My head about exploded from her awesome suggestion! She was thrilled with her stamped “aspen trees” and so was I, so I had to come home and recreate stamping aspen trees for myself.

In my Color Recipe Update Post, I mentioned using Gina K’s inks while at Junkie Fest and liking the crisp impression from the inks … so I put them to the test using Classic Old Truck. I was not disappointed! First, all her ink colors responded with full coverage and crisp impression. Second, a wide color range of colors with 49 different colors. I really love the aqua colors she carries and would have a tough time trying to stamp this light turquoise truck using Memento inks.

I’m obsessed with this Baileys Cheesecake Cake. Layers of chocolate cake, creamy cheesecake and Bailey’s Irish Cream ganache. Doesn’t that just sound delicious? 

Baileys Cheesecake Cake

Cake Ingredients

  • 1 box triple chocolate cake mix
  • eggs
  • water
  • oil

Cheesecake Ingredients

  • 3 – 8oz cream cheese
  • 1 C sugar
  • 3 tbsp flour
  • 3/4 C sour cream
  • 1/2 C Baileys Irish Creme
  • 3 eggs
  • 1 tsp vanilla

Baileys Cheesecake CakeChocolate Ganache

  • 1 1/2 C semi sweet chocolate chips
  • 5 tbsp Bailey’s Irish Creme
  • 5 tbsp heavy whipping cream
  • Whipping cream
  • 1 C heavy whipping cream
  • 2 tbsp Bailey’s Irish Creme
  • 1/3 C powered sugar
  • 1 disposable piping bag with star tip

Cake Directions

  1. Preheat oven to 350 degrees
  2. Prepare cake as shown in directions on the back of the box
  3. Spray the springform pan with cooking spray
  4. Pour cake batter half way into the springform pan
  5. Bake for 30-35 minutes or until a toothpick comes out clean
  6. Once baked, reduce the temp to 300 degrees

Baileys Cheesecake CakeCheesecake Directions

  1. Using a standing mixer, cream together the cream cheese, sugar and flour until combined and smooth
  2. Mix in the sour cream until smooth
  3. Mix in the Baileys and vanilla extract until smooth
  4. Beat in the eggs, one at a time until mixed in before mixing in the next egg.
  5. Pour the cheesecake batter onto the top of the cake in the springform pan
  6. Place into the oven for 1 hour
  7. Once the timer goes off, turn off the oven and leave cheesecake in the oven for 30 minutes
  8. Once 30 minutes is up, crack the oven door and leave cheesecake in there for another 30 minutes
  9. Once that 30 minutes is up, remove cheesecake from oven and place into the fridge overnight

Chocolate Ganache Directions

  1. Using a double boiler, combine the chocolate chips, heavy whipping cream and Bailey’s into the top pot
  2. Gradually mix with a wired whisk until chocolate chips start to melt
  3. Once chocolate chips have melted, remove from the stove and carefully pour the ganache onto the top of the cheesecake
  4. Smooth chocolate with a angled spatula
  5. Place into the fridge for 2 hours to allow the ganache to harden

Baileys Cheesecake CakeWhipping Cream Directions

  1. Using a large mixing bowl and hand beaters, combine the heavy whipping cream , powdered sugar and Bailey’s and beat on medium speed until stiff peaks start to form
  2. Scoop into piping bag and set aside
  3. Remove cheesecake from the fridge and pipe dollops of whipped cream onto the edge of the cheesecake
  4. Enjoy a big slice of your delicious Baileys Cheesecake Cake!

Ingredients

  • Cake Ingredients
  • 1 box triple chocolate cake mix

  • ⅓ C powered sugar
  • 1 disposable piping bag with star tip

Instructions

自制醬汁好輕鬆:簡易意式松子羅勒大蝦意粉 (附食譜及青醬pesto sauce製作)

有時為了貪方便,我也會買定一樽樽意粉醬料放在家中,忙碌的時候,做個懶人餐也蠻好的。

如果有時間買材料的話,我也會自製醬汁啊,味道是完全不一樣的,美味多幾倍哩。我最愛醬汁之一,就是青醬pesto sauce,製好醬汁即煮意粉,味道so fresh,吃過不能回頭啊!

今次教大家做一個意式松子羅勒大蝦意粉,賣相媲美餐廳,純天然做青醬方法,以後想吃最新鮮的意粉醬料,學懂了,以後想吃就可以隨時吃了。




材料 (2人份量)

急凍去頭鳳尾蝦………….10

意粉………………………2/3

車厘茄……………………1/4

泰國蘆筍仔…………………...1

松子仁(已焗)………………..少許

羅勒葉Basil(裝飾用)…………1

無鹽牛溫…………………..20g


青醬Pesto Sauce

蒜蓉………………………….1

松子仁(已焗)………………100g

Grana Padano 芝士(刨絲)…..50g

新鮮羅勒葉Basil……………25g

橄欖油(Olive Oil)………..250ml

海鹽…………………….1/2茶匙

即磨黑椒……………….1/4茶匙


1)  先把去頭鳳尾蝦解凍,洗淨抹乾水。
車厘茄及蘆筍仔洗淨,分別切半及切段待用。





急凍去頭鳳尾蝦,購售自Aeon超市。

2)   在焗盤鋪上錫紙,放上松子仁,
150度焗約3-5分鐘,出爐待用。




松子仁購自優品360


3)   羅勒葉洗淨後,拔下葉的部份(莖部不要)
蒜頭去皮,芝士刨絲待用。





新鮮羅勒葉購自大型超市或街市售賣香草的商鋪。

芝士購自大埔梁九記,也可以芝士粉代替。


4)  把羅勒葉、已焗松子仁、蒜頭、橄欖油放入blender內打至幼滑,後加芝士絲、即磨黑椒、海鹽拌勻成青醬。





5)  準備意粉,水滾後加入少許的鹽及橄欖油,放入意粉,按包裝紙上的時間烹煮(12分鐘) ,另蘆筍仔放入滾水灼熟約1分鐘,瀝乾水待用。



6)  預備平底煎鑊,下牛油,融化後,放上鳳尾蝦,煎成金黃色。


7) 放入青醬、煮好的意粉、蘆筍仔、車厘茄快速炒勻,以海鹽及即磨黑椒調味,刨上芝士絲,即成。






超美味的意式松子羅勒大蝦意粉,看著我也心動和食指大動。

配料超多的呀,就是自家煮的好處吧。

如果喜歡吃juicy口感的車厘茄,可在煎蝦後放入番茄炒至軟身,才加意粉一起炒。


我不客氣了!!

A new study from the Canadian Centre for Policy Alternatives says that the tri-cities are the worst place in Canada for women in terms of safety and health.

These rankings were based on the CCPA’s Gender Gap Index, modelled after the Global Gender Gap Index.

“Years of effort to remove entrenched economic, cultural and social barriers to women’s progress are not landing the results we all expected by now,” the report reads.

According to the study, the rates at which sexual assault and domestic violence were reported to the Waterloo Regional Police Service were the highest among large cities. In 2017, 1,300 people were reportedly victims of domestic violence, most of whom were women.

Criminal harassment targeting was the highest rate out of all cities studied.

Sexual assaults were reported to police at a rate of 110.3 per 100,000 people.

As for health, the study says that life expectancy for men in the region are just above the national average, while women come in just below at 83.7 years.

The gender gap has also widened considerably when it comes to ranking one’s health, putting Kitchener, Waterloo and Cambridge at 23rd.

Rates of screening for cervical cancer were also below average, putting the region in 19th place. Altogether, these rankings put health for women in the region in last place.
