Coconut Cupcakes with Passion Fruit Curd

Let’s bring a little sunshine to our lives with these little gems that are these coconut cupcakes with passion fruit curd, shall we? It’s the yellow color I guess, it simply screams joy.

While many of you are cuddled under a blanket, here we can be found in one of three places: inside a pool, under the a/c or melting in the street. So hot, my oven hasn’t been used in weeks. Unbelievable. And I call myself a baker with a food blog. Ha.

So we’re talking coconut cupcakes with passion fruit curd today, and the mandatory cream cheese frosting, at least for me, because it’s so easy to make, and tastes so good! I’m not a frosting person – or a cupcake one for that matter – but if you look at the birthday carrot cake there’s a ton of it. Or topping these sweeties too. Yeah, cream cheese frosting is the king of frostingland.

And what about the curd? Are you a passion fruit lover like me? Does it make you happy to inhale that fresh lemony scent? It’s the same I used for the no-bake passion fruit lemon cheesecake, and that was a total hit.
Though you will find a rather large cake archive in here, I’m not particularly a fan of cupcakes. Something about the frosting to cake ratio that sends me the other way. But I draw the line at these coconut cupcakes with tangy passion fruit curd. They’re the kind that you eat and don’t feel like your teeth are falling off from all the sugar.

There’s a superb coconut batter, a passion fruit lemon curd center, and a creamy frosting with toasted coconut. And each part of this recipe can be made in advance. Yay.

And believe what I say, because I’m not into cupcakes, at all. So they must be good. That good.

Yield 12 cupcakes

For the passion fruit puree, scoop the pulp into a bowl and mash it with a fork, to dissolve as many large pieces as you can. It will be chunky and with seeds.

If you want the smooth puree, strain it and then pick out the seeds to use later. Or not. Whatever you like. To toast the coconut, put it in a 325º oven for about 5 minutes. Careful not to burn it!

Ingredients

For the coconut cupcakes:

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • Large pinch of salt
  • ¾ cup unsalted butter, room tº
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1/2 a lemon
  • 1 cup shredded unsweetened coconut
  • ¾ cup buttermilk or coconut milk
  • Coconut scales, toasted, to decorate

For the passion fruit curd:

  • 3 egg yolks
  • ¾ cup passion fruit puree
  • ¼ cup lemon juice
  • Scant ½ cup unsalted butter
  • ¼ cup sugar

For the cream cheese frosting:

  • 1/3 cup cream cheese, room tº
  • 3 Tbs unsalted butter, room tº
  • 1 to 1 ½ cups confectioners’ sugar, or as needed

Instructions

For the passion fruit curd:

  1. In a bowl, beat yolks and sugar for 1 minute. Add passion fruit and reserve.
  2. Melt butter in a medium saucepan over low heat. Before it boils, add yolk mixture and cook over medium/low heat, stirring constantly, until the mix thickens, but without letting it boil.
  3. Pour into sterilized jars if you plan to keep it for a few weeks, and not use it within the next 5 days.
  4. Keep refrigerated.

For the coconut cupcakes:

  1. Preheat oven to 350ºF. Fill a muffin tin with 12 paper liners.
  2. Sift flour, baking powder and salt.
  3. In a large bowl, beat butter for 1 minute. Gradually add sugar, beating constantly at medium/high speed.
  4. Add eggs, one at a time, beating well after each one. Add coconut and vanilla and mix to combine.
  5. Add the dry ingredients in 3 parts, alternating with the buttermilk in 2 parts. Don’t over mix at this point, or the cupcakes will be tough.
  6. Fill liners to ¾ of their capacity, and bake for about 25 minutes, until golden, springy to the touch and a tester comes out clean.
  7. Let cool completely on a wire rack.
  8. Scoop a small teaspoon from each cupcake. Fill with the curd carefully.
  9. Pipe or spoon the frosting on top and top with toasted coconut to decorate.

For the cream cheese frosting:

  1. Beat cream cheese and butter until very smooth.
  2. Add sugar, gradually, until you have a thick batter that can be piped.
  3. Keep covered, in the fridge.

The Truth About Treating Irritable Bowel Syndrome with Enemas

Irritable Bowel Syndrome (IBS), is a condition which causes recurring discomfort or pain in the stomach as well as changes in bowel habits. While the condition can affect people at any age, first symptoms typically occur as early as 15 years of age.

Women have a higher likelihood of getting IBS than men, and 1 in 7 Australians experience symptoms of IBS.

Symptoms, Causes, and Diagnosis of Irritable Bowel Syndrome

Common symptoms of IBS are abdominal pain or discomfort, and changes in one’s bowel habits. The pain can vary from mild to severe and can get worse by eating. Pain generally occurs at a particular time of the day. Clearing the bowels and passing wind provides some immediate relief.

Most people will find that one symptom; whether it is pain, diarrhoea or constipation occur more often than the others.

Faeces of people with IBS can vary from watery and loose to pellet-like and hard.

The menstrual cycle can also have an impact on when the pain occurs in women.

Other symptoms are nausea, excess wind, backache, bladder problems, indigestion and tiredness.

Although the exact cause of irritable bowel syndrome is not known, it can be due to a combination of factors such as genetic make-up, frequent and strong contractions of muscles lining the bowel and sensitivity to gas in the bowel.

Stress is a major factor which triggers IBS and the symptoms can get worse after consuming specific food or drink such as coffee, tea and fatty food. Symptoms can worsen with the use of antibiotics, anti-inflammatory and other medications.

The symptoms of IBS are similar to those of other bowel conditions such as endometriosis, Crohn’s disease or ulcerative colitis. For an accurate assessment, it is advisable to schedule a visit to a General Practitioner, who may recommend a colonoscopy to rule out other serious conditions. Relying on Google for a diagnosis isn’t recommended.

Enemas – Your Ally in Treating IBS Naturally

IBS is primarily a disorder of the large intestine or colon. The colon reabsorbs water and nutrients, while eliminating toxic waste through regular bowel movements. When the colon does not function properly, residual toxins cause the colon to harden, preventing nutrient absorption.

Colon cleansing helps in getting rid of toxins and hardened fecal matter accumulated in the colon. It removes pathogens and promotes the growth of good bacteria. This promotes normal and regular bowel movements which help in easing the symptoms of IBS.

An increasingly popular method of colon cleansing is coffee enemas.

From the late 1970s to early 1980s, researchers in the Lee Wattenberg laboratory identified palmitic acids salts, cafestol palmitate and kahweol, in coffee. These salts enhance glutathione S-transferase, an important liver enzyme, which plays an important role in the detoxification system. It binds with toxins in the colon, preparing them to be easily carried out.

Caffeine is a mild stimulant for the central nervous system, and coffee enemas can dilate bile ducts. This facilitates toxic waste breakdown by the liver. Administered rectally, caffeine increases the bile flow and detoxifies the enzyme systems.

Getting rid of toxins improves the efficiency of the liver which no longer has to work extra hard to clear waste build-up. Normally bile is reabsorbed 9 to 10 times, before getting extracted through the faeces. The chloretic action of coffee enema restricts reabsorption of the toxic bile and is a safe way to detoxify the bloodstream through the existing enzyme systems in the small bowel and liver.

While the origin of enemas dates back to ancient times, in the 1920’s German scientists discovered that a coffee enema caused bile ducts in the body to dilate and stimulate secretion of bile. Later, Dr Max Gerson, incorporated coffee enemas in his pioneering treatment of cancer and received positive results. Dr. William Kelley also used coffee enemas when treating himself for pancreatic cancer, and was impressed with the results.

Nowadays even celebrities have begun using coffee enemas for cleansing their colon. With a growing interest in organic treatment, coffee enemas are gaining in popularity to treat IBS.

Management-level health jobs will be axed in LHIN merger, Doug Ford says

Management-level jobs will be lost in the planned merger of 20 provincial health agencies, Premier Doug Ford said Wednesday, as his message shifted from no job losses under his government to no front-line job losses.

Front-line jobs will be protected, Ford said, as the province consolidates 14 local health integration networks, Cancer Care Ontario, eHealth Ontario and several other agencies into a new organization called Ontario Health.

"You know who's going to lose their jobs, unfortunately, are the people in the LHINs -- the CEOs that are making hundreds of thousands of dollars, the big silos they have there, the big executives, presidents and vice-presidents making outrageous amounts of money," Ford said.

"We're going to take that money and put it to the front lines."

When Health Minister Christine Elliott announced the health system transformation last month, background materials portrayed some management and administrative work at the agencies as "duplicative," which Elliott said referred to administrative functions.

But she wouldn't say if there would be job losses.

During last year's election campaign, Ford often promised that under his government not a single job would be lost, as he looks for ways to trim a multi-billion-dollar deficit. But in recent weeks his government and ministers have amended that promise, adding the phrase "front-line."

"So far we've made these efficiencies and not one person has lost their job," Ford said Wednesday.

Ontario's ombudsman has said that some workers in the provincial Child and Youth Advocate's office will lose their jobs when his office assumes its duties this spring.

The Toronto Catholic District School Board has also said the province's decision to cut programs aimed at providing students with extra skills and support would result in the loss of about 35 part-time student tutors and 60 working in youth after-hour programs.

Kidsability, an autism service provider in the Waterloo region, said it is laying off eight therapists and one social worker as a result of the government's changes to how it funds autism therapy. Regional service providers will no longer be directly funded by the government, rather, families will be given money directly to spend in a variety of possible ways.

Families say the annual caps of $20,000 for treatment for children under six and $5,000 for children six to 18 will only pay for a fraction of what many kids need, as intensive therapy can cost up to $80,000 per year. The changes mean that parents may not seek services from Kidsability, though the CEO told CBC she is leaving the door open to rehiring the laid off workers.

NDP deputy leader Sara Singh said she expects deep cuts in the government's first budget, to be tabled next month.

"He says only managers will lose their jobs, but that's already untrue, and the cuts have only just begun," she said in a statement.

Ford also suggested Wednesday that the education minister will give an update later this week on class size consultations and full-day kindergarten. Singh questioned what that will mean.

"What will happen if Ford lifts the cap on class sizes or gets rid of full-day kindergarten with a teacher in the classroom all day?" she wrote. "Will kindergarten teachers be fired?"

Mustikkatuorepuuro + blogiuudistuksia

Hello darlings!

Viime kerrasta onkin vierähtänyt aikaa. Puolitahatonta blogisiestaa viettäessäni on ohi ehtinyt vierähtää niin joulu, uusivuosi kuin kokonainen tammikuukin. Ja onpahan ohi vierähtänyt myös vanhan blogin aikakausikin.

Kuten varmaan huomasitkin, paljon on ehtinyt tapahtua blogin ulkoasussa. Pistin saitin täydelliseen remppaan ja ainakin omaan makuun tämä uusi, valoisampi tyyli istuu 10x paremmin kuin entinen. Sisältö pääsee enemmän esiin ja kuvat ovat oikeutetusti pääosassa = yes please!

Remppa käynnistyi hetken mielijohteesta, vaikka olin sitä jo pidempään haudutellut. Vanha blogi ei enää tuntunut yhtään omalta saati omannäköiseltä, joten aikani sen kanssa tuskailtuani, asialle oli pakko tehdä jotain. Reilun viikon kestäneen huoltokatkoksen jälkeen (anteeksi kaikki joille tästä aiheutui häiriötä!) ja lukuisten harmaiden hiuksien ja koodaussotkujen ja WTF-momenttien jälkeen, uusi ulkoasu on valmis ja (toivottavasti) täysin funktionaalinen!

Eniten mua kiinnostaakin nyt, miltä tämä mullistus näyttää teistä! Löytyykö kaikki yhtä helposti (tai ideaalisti jopa helpommin) kuin aikaisemmin? Näkyykö kuvat hyvin ja onko teksti luettavaa? Onnistuuko navigointi maalaisjärjellä vai onko tässä joku kommervenkki, joka multa on jäänyt kokonaan huomaamatta?! Kaikki kommentit on kullanarvoisia joten näppis laulamaan, jos tulee mieleen jotain.

Mutta tietotekniikka-asiat sikseen, oli mulla muutakin asiaa. En ilmeisesti osaa kirjoittaa postausta liittämättä sen kylkeen reseptiä, joten tässä tulee: ihana, kermainen, vatsaa hellivä mustikkatuorepuuro.

Tuorepuurot ovat yksi maailmankaikkeuden monipuolisimmista ja helpoimmin varioitavista aamupaloista ja syönkin niitä melkein viikottain (eli silloin, jos en syö tavallista puuroa). Suosikkejani ovat tuorepuurot, joihin tulee kauran lisäksi runsaasti marjoja, kuten tässä mansikkatuorepuurossa. Lisäksi puuron täyttävyysastetta on helppo säätää; lisäämällä joukkoon esimerkiksi siemeniä tai proteiinijauhetta, saa kelpo aterian jolla pärjää helposti lounaaseen asti. Tämä mustikkatuorepuuro on kuitenkin sinänsä helppo, ettet tarvitse kuin kolmea eri raaka-ainetta: mustikoita (pakastemustikat kelpaavat mainiosti), soija- tai kaurajogurttia ja tietysti kaurahiutaleita. Huomasin, että tekemällä tuorepuuron jogurttiin kasvimaidon sijasta, tulee siitä aivan mielettömän kermainen ja herkullinen. Suosittelen kokeilemaan – ja ihastumaan. Kokeilin myös käyttää isoja ”aitoja” kaurahiutaleita tavallisten ohuiden hiutaleiden sijasta, ja voi jees. Lopputulos oli ihanan birchermäinen, sillä isot kaurahiutaleet eivät mene ihan niin mössöksi mitä tavalliset, vaan purupintaakin jää. 

Voisin höpöttää tässä koko päivän, mutta ei. Mene ja kokeile itse. Preppaa mustikkatuorepuuro valmiiksi edellisenä iltana ja ota vaikka töihin/kouluun messiin, tai nauti hitaasti viikonloppuna asiaankuuluvien koristeluiden kanssa. Lupaan, että tykkäät. Ja hei, jaa toki kommenttisi blogiuudistukseen liittyen, kuulisin mielelläni mitä mieltä just sä oot!

Mustikkatuorepuuro (vegaaninen) 1:lle

  • 1 dl isoja kaurahiutaleita
  • 2 dl soija- tai kaurajogurttia
  • 3 rkl pakastemustikoita
  • (0,5 tl kardemummaa)
  • (ripaus aitoa vaniljaa)
  • + haluamasi härpäkkeet koristeeksi

Sekoita ainekset keskenään sekaisin ja laita tiiviiseen, suljettavaan astiaan tekeytymään.Kardemumma ja vanilja sopivat puuroon erinomaisesti, mutta voit jättää ne halutessasi pois. Pidä puuroa jääkaapissa yön yli.

Tarkista maku ja koostumus seuraavana päivänä. Jos puuro tuntuu liian paksulta, lisää loraus jogurttia (tai esimerkiksi kauramaitoa).

Nauti puuro esimerkiksi marjojen, pähkinöiden ja siementen kera.

Not only do I have plenty of soups coming to you this month to kick off the New Year, but I also happen to have tons of options for keeping them dairy free, gluten free AND making them in the slow cooker. I don’t do the Whole30 thing but please know that my recipes are highly adaptable, so let me know if you have any questions!

In the meantime, can we talk about how delicious this white chicken chili is? Typically, white chicken chili is made with white beans, however, I happen to love the flavor and texture of chickpeas much more so I chose to use them in this version and dang… it turned out DELICIOUS.

To create a ‘creamy’ thickness to the chili, I decided to blend one can of the chickpeas then add it back to the pot with another can of chickpeas and the rest of the ingredients: green chiles, onion, broth, chicken, corn, lime juice, cilantro. It created a thick, creamy texture and flavor that I couldn’t stop slurping down.

Instead of using shredded, cooked chicken, you’ll use 1 1/2 pounds of raw boneless skinless chicken breasts or thighs. After step 1, simply add all ingredients except the lime juice and cilantro to your slow cooker. Cook on high for 3 hours or low for 6-7 hours. Remove chicken and shred, then add back to the slow cooker and stir in lime juice and cilantro. That’s it!

I mean seriously, what could be better than a warm cozy bowl of chicken chili piled with avocado, tortilla chips, cilantro, and even, jalapenos if you’re feeling spicyyyyy (aka me errrday).

  1. Start by adding 1 ½ cups of the rinsed and drained chickpeas (from one of the cans) and ½ cup water to a blender. Blend until somewhat smooth, adding a little more water if necessary.
  2. Add olive oil to a large dutch oven or large pot and place over medium high heat. Add onion and green chiles and cook until softened, about 3-4 minutes. Next stir in cumin, chili powder, coriander and dried oregano; allow the spices to cook for 30 seconds, then add in chicken broth, blended chickpeas, remaining whole chickpeas and salt and pepper. Simmer on low heat for 20-30 minutes.
  3. After 20 minutes, stir in the shredded chicken breast, corn, fresh lime juice and cilantro. Allow to cook for 5-10 more minutes. Serve with tortilla chips, an extra lime wedge and avocado if you’d like. Serves 4. Enjoy!

Curious about how to make this recipe in the slow cooker? Instead of using shredded, cooked chicken, you'll use 1 1/2 pounds of raw boneless skinless chicken breasts or thighs. After step 1, simply add all ingredients except the lime juice and cilantro to your slow cooker. Cook on high for 3 hours or low for 6-7 hours. Remove chicken and shred, then add back to the slow cooker and stir in lime juice and cilantro. That's it!

Q: What were the stand-out priorities in your brief from the client?

The main reason to build this extension was for it to become an all-year-round structure, suited for purpose to the highest degree, and to be used every day as a kitchen and dining room. The main concerns that needed to be addressed were heat loss and heat gain. With luck, heat gain wasn’t a problem as it’s a nicely shaded area – so no solar control glass was needed to regulate the incoming heat. We use high performing glass as standard to stop the heat leaving the structure; using this, this along with the high performing, thermally broken aluminium frame, you have an all-year-round extension. I suggest that we include a couple of opening windows around the structure to promote a natural air flow on warm days, and these, together with the sliding door to the front, work perfectly to provide exactly what was required.

Q: How did you set about answering that brief, what were your first thoughts?

I was able to start designing the structure from the architects drawings that were supplied, and created a working design to suit the needs of the client. After agreeing the specification and overall design we moved forwards with the project.

Q: Can you explain the reasons behind the proportions of the layout and design features

The overall layout of the structure was based upon the unique space that was available for an extension. The L-shaped structure was a perfect fit to allow for a kitchen, dining and sitting area. All spaces flow easily from one section to another, using the open plan style and same flooring throughout. I kept the spacing of the aluminium supports quite wide to give as much light as possible as this is a shaded area. Consequently we were able to allow the light flood into this room, with spectacular results. This is the reason the client decided on a high performing glass structure rather than a traditional brick built extension, which would have made this room and the rooms behind it very dark even on the brightest of days.

Q: What design elements do you think make the scheme so successful?

The simple and contemporary look of the extension works really well in this particular situation. Our system has an engineered appearance so this just compliments the modern kitchen and stone wall to the kitchen area. The colour we specified, Ral 7016, emphasises the aforementioned features and continues the streamlined, modern look.

Q: What is your best advice for someone who may be planning a new glazed extension?

I would advise using an architect to plan the overall building project, and to have them liaise and communicate with Apropos at the early stages, so we can help detail the glass structure. We have had a lot of clients who have full architectural drawings already in place, but then we discover that such structure just isn’t possible for us to manufacture and we need to re-design to suit. So if it’s a ‘back to the drawing board’ situation it can sometimes lead to a new planning application which is a delay to the client. I would also advise getting realistic budgets rather than relying on an architect working on sq meter rules. This almost never works and gives the client an unrealistic budget to work to. Speak to builders and us early in the design and planning process to get a realistic budget. This will make a big difference when designing the extension as the end cost is always a priority for most clients. It can be the difference between designing a successful project that’s exactly what is required, rather than fitting something into a specific budget!

Overnight Oats with Mixed Berries and ChiaLighter Breakfasts

Tofu scrambles and breakfast sandwiches are my ideal meals with which to start the day, but the hot August mornings call for lighter fare. For the past few weeks, breakfast has been avocado toast and overnight oats.

I was a little late to hop on the overnight oats bandwagon. The first time I had it, I really didn’t like the fact that it was cold. Cold oatmeal? Uh, no thanks!

I find not liking foods a bit of a personal challenge, so if I don’t like something, I’ll look for ways to prepare it so that I do. It’s something I work on with my health coaching clients, and I like to lead by example.

To be honest, it took me a long time to warm up to cooked oatmeal (no pun intended), so it wasn’t much of a surprise that overnight oats wasn’t my thing. It reminded me of eating paste, although I don’t think I ever actually ate paste as a child. (Or as an adult.) To make it palatable, I like to add lots of nuts and seeds for texture as well as fruit for a more pleasing taste. So that seemed like the logical thing to do with overnight oats, too.

For this overnight oats recipe, I used mixed berries. The allure of the piles of juicy, fresh berries always draws me in when I walk into my local whole foods, and I can never pick just one. Here, I’ve used a mix of blueberries, raspberries, blackberries, and strawberries, but you can use whatever suits your fancy. I’ve also used slivered almonds and cacao nibs, but again, feel free to switch it up according to your tastes.

I’ve slightly cheated with this recipe, because it’s not really overnight oats, is it? It’s actually more of an overnight oats and chia pudding hybrid. I really like adding chia seeds to my oats, as it helps to give the dish a little weight. I had the same issue with chia pudding the first time I had it that I had with oats: It was a little pasty. But again, adding lots of fruit and nuts really helps.

I’ve found that most recipes for overnight oats and chia puddings make very small servings. How is half a cup of anything supposed to fill me up? I’m usually hangry by lunchtime with that kind of portion. This recipe makes two large servings, and I’ve found that it’s filling enough to get me through to my midday meal.

Waking up to breakfast already been prepared is a great way to start the day. If your mornings are hectic, mix the berries, nuts, and cacao nibs in with the oats and chia the night before. If you have a little time, you can wait until the morning and serve it parfait-style.

Stored in an air-tight container, overnight oats will last up to 5 days in the fridge.

Ingredients

  • 1 1/2 cups almond milk (or your favorite non-dairy milk)
  • 3 tablespoon chia seeds
  • ¾ cup rolled oats
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extra
  • 2 cups mixed berries
  • 2 tablespoon cocao nibs
  • 2 tablespoons slivered almonds

Instructions

  1. Mix together the almond milk, chia seeds, rolled oats and maple syrup in a large jar or bowl with a lid. Mix in the berries, cacao nibs, and slivered almonds. Refrigerate overnight and enjoy for breakfast in the morning!
